Restaurant Manager

Scope and General Purpose of Job:
- To manage the assigned outlet as a successful independent profit center, in line with the outlet’s operating concept and Xperience standards, ensuring maximum guest satisfaction while operating within budget, helping to ensure the financial success of the outlet.
Main Duties:
- Administration
- Follows and adheres to the Outlet’s Departmental Operations Manuals.
- Attends daily Food and Beverage and Departmental Meetings, as scheduled.
- Conducts pre-shift briefings and regular communications meetings, ensuring that they are effective and conducted as necessary.
- Maintains and utilizes other departmental and employee communications channels, e.g. notice boards, log books, handover reports, etc.
- Customer Service
- Ensures that all employees in the outlet deliver the Xperience promise and provides exceptional guest service at all times.
- Ensures that outlet employees also provide excellent service to internal customers as appropriate.
- Handles all guest and internal customer complaints and inquiries in a courteous and efficient manner, following through to make sure problems are resolved satisfactorily.
- Financial
- Ensures that the monthly forecasted food and beverage revenues are achieved.
- Proactively manage all costs.
- Maximizes employee productivity through the use of multi-skilling, multi-tasking, and flexible scheduling in order to meet the financial goals of the outlet as well as the expectations of the guests.
- Assists in the preparation of the Annual Business Plan and the monthly reforecast of revenues and expenses.
- Assists in the maintenance of the outlet point-of-sales system.
- Ensures that all sales are properly recorded, following prescribed procedures for issuing, voiding or correcting outlet checks.
- Oversees the proper use and security of cashier/waiter/waitress floats
- Assists in the inventory management and ongoing maintenance of the outlet, including establishing par stocks, equipment cares and maintenance and inventory taking as required.
- Marketing
- Constantly evaluates local, national and international market trends, vendors, and other hotel/restaurant operations to make sure that the hotel’s own operations remain competitive and cutting-edge.
- Looks for Marketing and Public Relations opportunities to increase awareness and ultimately business.
- Reviews and analyzes the weekly/monthly Menu Sales Analysis in order to recommend changes to the menu mix and engineer the menu for greater profitability and customer satisfaction.
- Operational
- Establishes the service standards for the outlet, overseeing the consistent implementation of the service standards and training the employees as necessary.
- Monitors all outlet operations, especially during peak business periods, assisting and making adjustments where necessary.
- Ensures that all company minimum standards have been implemented where appropriate.
- Responds to the results of the Consumer Audit and to ensure that the relevant changes are implemented.
- Makes sure that outlet employees work in a supportive and flexible manner with other departments, in a spirit of “Team work”.
- Tastes and monitors the food products served, providing feedback where appropriate.
- Develops an outstanding beverage selection that is competitive in the local marketplace and includes: coffees and teas; alcoholic and non-alcoholic beverages; and an interesting wine program.
- Works closely with the Stewarding Manager to ensure that operating equipment is cared for to maximize its useful life and to minimize breakage.
- Works with the Director of Engineering and Housekeeping Manager to ensure that the outlet is clean, properly maintained and cared for.
- Personnel
- Assists in the recruitment and selection of outlet employees. To follow hotel guidelines when recruiting and use a competency-based approach to selecting employees.
- Oversees the punctuality and appearance of outlet employees, making sure that they wear the correct uniform and maintain a high standard of personal appearance and hygiene, according to the hotel and department’s grooming standards.
- Maximize the effectiveness of outlet employees by developing each of their skills and abilities through the appropriate training, coaching, and/or mentoring.
- Conducts annual Performance Appraisal Discussions with employees.
- Implements effective training programs for employees in coordination with the Training Manager and the outlet’s Departmental Trainers.
- Prepares and posts weekly work schedules for outlet employees, making sure that they reflect business needs and other key performance indicators.
- Encourages employees to be creative and innovative, challenging them for their contribution to the success of the operation.
- Ensures that all employees have a complete understanding of and adhere to employee rules and regulations.
