Executive Pastry Chef

As an Executive Pastry Chef, you are responsible for operating the pastry section of the kitchen while working closely with the Executive Chef to deliver an excellent Guest and Member experience. You will be responsible for the successful management of Pastry section to prepare and produce high quality pastry, bakery and desserts for the hotel, in line with brand and concept guidelines. An Executive Pastry Chef will also be required to plan production and develop seasonal offerings. Specifically, you will be responsible for performing the following tasks to the highest standards:
**What will I be doing?**
As an Executive Pastry Chef, you are responsible for operating the pastry section of the kitchen while working closely with the Executive Chef to deliver an excellent Guest and Member experience. You will be responsible for the successful management of Pastry section to prepare and produce high quality pastry, bakery and desserts for the hotel, in line with brand and concept guidelines. An Executive Pastry Chef will also be required to plan production and develop seasonal offerings. Specifically, you will be responsible for performing the following tasks to the highest standards:
- Manage the preparation and production of all pastry, bakery and dessert items; ensuring produced items meet the specified standards.
- Work with the Executive Chef to develop attractive pastry, bakery menus and promotions. Taking into consideration food cost requirements and building accurate detailed recipes. Conduct menu tastings and set standards and trainings into place.
- In Charge of delivering Pastry and Bakery items to 13 outlets as well as a large Banqueting operation.
- Recruit, manage, train and develop the Pastry and Bakery team and ensure the team delivers great guest experiences by maintaining consistently high service standards.
- Ensure excellent guest experiences by maintaining consistently high food quality and presentation standards. Review guests' feedback and take appropriate action to improve guest satisfaction.
- Develop appropriate seasonal menu offerings.
- Manage and monitor food cost controls/food wastage to contribute to Food and Beverage revenue. Carry out regular reviews of performance against targets and take corrective actions whenever needed.
- Work with the Purchasing team to develop good network of suppliers to ensure ingredients quality and maintain cost effective plan.
- Maintain effective people management practices, including scheduling, training, performance management and recruitment.
- Ensure all equipment is working to the required specifications and report any issue to the Engineering team quickly. Ensure high standards of Kitchen cleanliness are maintained.
- Maintain good communication and work relationships in all hotel areas including Kitchen and F&B Teams, Hotel Management and Suppliers.
- Maintain up-to-date product knowledge, including current and future trends, equipment and suppliers, and make appropriate adjustments plans accordingly.
- Ensure compliance with food hygiene and Health and Safety regulations.

- Creative Pastry approach, with 5-7 years' of experience in a similar role and an internationally recognized pastry/bakery qualification within Full Service hotels.
- Commercial focus, with a demonstrated ability to deliver exceptional dishes and enhance guest satisfaction.
- Energetic, strong leader and possess good people management skills.
- Experience in managing, developing and motivating team.
- Excellent communication skills across all levels and functions.
- Guest focus, experienced in operating at the high standards of food production, quality and hygiene to deliver memorable guest experiences.
- Excellent attention to detail, with the ability to work effectively in a fast-paced environment.
- Excellent grooming standards.
- Excellent planning and organizing skills.

- Proficiency with computers and computer programs, including Microsoft Word, Excel and Outlook
