JOB SUMMARY

Assists the Sous Chef in ensuring quality, consistency, and production of kitchen areas. Shows culinary skills by performing tasks, leading the staff, and managing all food functions. Works with the team to enhance guest and employee satisfaction while staying within the budget. Must guarantee sanitation and food standards are met. Develops and trains the team for better outcomes.

CANDIDATE PROFILE

Education and Experience

• High school diploma or GED; 4 years of experience in culinary, food, or related areas.

OR

• 2-year degree in Culinary Arts, Hotel and Restaurant Management, or related major; 2 years of experience in culinary, food, or related areas.

CORE WORK ACTIVITIES

Ensuring Culinary Standards and Responsibilities are Met

• Supervises food preparation and production to ensure compliance with recipes and standards.

• Manages kitchen operations and ensures adherence to Food & Beverage policies.

• Maintains food handling and storage standards.

• Identifies quality products, presentations, and flavor.

• Plans and manages food quantities and plating requirements.

• Communicates production needs and creates prep lists.

• Assists in developing daily and seasonal menus.

• Ensures compliance with laws and regulations.

• Estimates daily restaurant production needs.

• Prepares and cooks various foods.

• Checks food quality and presentation.

• Determines food presentation and creates displays.

Leading Kitchen Team

• Supervises and coordinates food preparation activities.

• Utilizes interpersonal skills to lead, influence, and encourage others.

• Leads shift teams, prepares food items, and manages kitchen employees.

• Builds trust, respect, and cooperation among team members.

• Serves as a role model for appropriate behaviors.

• Ensures employee productivity and cross-training.

• Establishes open relationships and collaborates with employees.

• Takes over Sous Chef duties in their absence.

• Assists Chef in daily operations.

Establishing and Maintaining Kitchen Goals

• Sets and supports kitchen goals including performance and budget targets.

• Prioritizes daily operations and understands financial impacts.

• Investigates and reports on employee accidents.

• Implements safety standards.

Ensuring Exceptional Customer Service

• Provides superior service for customer satisfaction.

• Manages daily operations to meet customer expectations.

• Improves service by understanding guest needs.

• Acts as an example for guest relations and focuses on improvement.

• Empowers employees for excellent service and handles guest feedback.

Managing and Conducting Human Resource Activities

• Identifies others' developmental needs and helps improve their skills.

• Trains restaurant staff on menu items and manages employee procedures.

• Participates in performance appraisals and assists in hiring.

• Provides training tools and on-the-job training for employees.

Additional Responsibilities
