Supervise entire production of all Bakeries items
- Create and supply all Bakeries for food outlets and functions
- Should create new decorations and show pieces for buffets and functions
- Supply all kitchen outlets according to requisition orders
- Check in all food outlets the standards of Bakeries
- Check on the high quality of all items produced at the bakery kitchen
- Supervise his staff, train them and check on duty roster
- Check on food hygiene and cleanliness of his section
- Check on cake display cabinets in all outlets
- Supervise buffet set-ups and clearing
- Sets up training program for bakery staff
- Assist the executive chef in all matters regarding the bakery kitchen
- Set up standard recipes for the bakery production
- Control food wastage so as to maintain the food cost of respective kitchen at pre-determined levels
- Help reduce cost by keeping a control on power and fuel consuming machinery
- Supervise cleanliness of machinery and equipment and ensure proper handling by staff
- Should keep himself informed of hotel policies in respect of cleanliness, food storing, rules and regulations
- Maintain kitchen order and staff discipline
- Ensure follow-up of daily attendance record
- Coordinate purchase of bakery goods with the executive chef and purchasing manager
- Work closely with the chief steward, he should insist upon meticulous cleanliness and tidiness. Report immediately of dirty and untidy areas to chief steward
- Performs related duties and special projects as assigned

**Requirements**:

- Familiarize yourself with Hotel Health and Safety Policies and ensure you promote and comply with them
- Rectify hazardous situations, reporting major areas of concern and cost to superiors
- Familiarize yourself with property safety-first aid and fire and emergency procedures and actively enforce these
- 5+ years of experience as a bakery
- age between 30 to 45 years old
