Indicar los asientos a los huéspedes ofreciéndoles una mesa limpia y disponible, retirando las sillas, ubicando los menús limpios y actualizados delante de cada uno, etc. Guiar a los huéspedes a través de los comedores y brindar asistencia cuando la necesiten. Mover y acomodar las mesas, sillas y cubiertos y organizar la disposición de los lugares para grupos con necesidades especiales. Asegurarse de que los cubiertos sean los apropiados y de que cada huésped tenga una servilleta, cubiertos limpios y cualquier otro elemento que forme parte de un cubierto estándar. Comprobar los menús para asegurar que estén actualizados, limpios, completos y sin arrugas. Mantener la limpieza de las áreas de trabajo durante todo el día mediante un procedimiento de limpieza constante.
