Hotel 5* international brand is looking for head baker

**POSITION PURPOSE**

Under the general guidance and supervision of the Head Baker, Pastry Chef or delegate and within the limits of established brand policies and procedure, responsible for the preparation of all types of bakery goods.

**ESSENTIAL FUNCTIONS**
- Interacts and cooperates with other members of the bakery section and kitchen as appropriate.
- Interacts, cooperates with other departments and other sections of food and beverage as appropriate.
- Liaise with the Head Baker or delegate to ensure cleanliness and hygiene standards.

**Operational**
- Prepares under the guidance of the Head Baker or delegate, all baking ingredients and bakes breads, rolls, croissants in accordance with established recipes and methods.
- Ensures that all baked goods are visually attractive and are eye appealing.
- Prepares mise-en-place as requested.
- Assist in Buffet set ups and decoration.
- Ensures that the sections are kept clean and hygienic including walk-in and other refrigerator.
- Ensures that all Bakery shop equipment and utensils are well handled.
- Adheres to portion control, standard-plating instructions.
- Stores all bakery items according to established procedures/standards.
- Keeps bakery section in clean and orderly fashion.
- Complies with Dusit Hygiene and sanitation standards.
- Adopts the **"Clear as you go"** method of working.
- Performs related duties and special projects as assigned.
- Complies with the hotel’s health and safely policy.

**Responsibility And Authority**:
Responsible to accept on the job teaching and guidance and to co-operate with fellow workers to promote this. To attend the scheduled training classes. To share the Kitchen workload when able

**GENERAL**:

- Learns the hotels fire, safety, health and hygiene regulations and how to operate the Kitchen fire fighting equipment.
- Makes sure that standard recipes are respected.

**Cleanliness and Hygiene Standards**
- Learns the local health authorities’ sanitation and hygiene

Requirements.
- Ensures that local & hotel’s standards of cleanliness, hygiene and sanitation are maintained, as well as SGS

**SPECIFIC JOB KNOWLEDGE, SKILLS AND ABILITIES**

The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he can perform the essential functions of the job, with or without reasonable accommodation, using some other combination of knowledge, skills, and abilities:

- Must be able to speak, read, write and understand the primary language(s) used in the workplace.
- Most tasks are performed in a team environment with the employee acting as a team leader. There is mínimal direct supervision.

**QUALIFICATION STANDARDS**

**Education**

Past Bakery or Kitchen apprentice examination

**Experience**
- Four to five years’ international experience
- Ability to adapt quickly to any situation
- Must be imaginative and creative

**Grooming**

All employees must maintain a neat, clean and well-groomed appearance per brand standards.
